China

China has a huge influence on the world’s cuisine. It is inevitable that such a large, complex, and long lived culture would enrich everyone in some way. From hot pots to dim sum, to sechuan and cantonese, and from kung fu to kung pao, Chinese flavours were among the first Asian flavours to fuse with Western cooking. Canada has been made a little warmer by all the hot woks—fired up and cooking. What Canadian hasn’t been drawn to this delicious aromas, or been saved by some wonton soup. The beaver and the dragon may seem like an unlikely pair, but it has been a lasting friendship. May it continue.
